Writer (author of many Pavoni Editions) and publisher, he is the owner of the first Italian pastry shop part of the exclusive chain Relais Dessert International. Coach and President of Italian team which won the Coupe du Monde in Lyon in 1997. Founder of Italian Pastry Chef Academy (AMPI) and Cast Alimenti school, he matches an ecceptional technical background with a great didactical ability.
